One of my favorite things is to go to a restaurant and adapt their recipes to work for me when I get home. I had a beet salad at a German Beirhaus which I couldn’t stop thinking about. This is my adapted version of it.
I also use a personal recipe for the balsamic vinaigrette dressing. You can either make one or use a store-bought one. In my opinion, they don’t taste as good as making your own.

Beet Salad with Goat Cheese
I had a beet salad at a German Beirhaus which I couldn't stop thinking about. This is my adapted version of it.
Servings 1
Ingredients
- 2 cups mixed greens
- 1/2 cup cherry tomatoes
- 1-2 small cooked beets (you can buy them cooked and plain if you don't feel like making them)
- 1 oz goat cheese crumbles (~1/8 cup)
- 1/8 cup walnuts (optional)
- 2 tbsp balsamic vinaigrette
Instructions
- Chop the cherry tomatoes, cooked beets, and the walnuts.
- Combine the mixed greens with the chopped ingredients.
- Sprinkle the goat cheese and pour the dressing on top.
