Lemon Vinaigrette Dressing

The lemon vinaigrette dressing is fresh and light. It pairs well with seafood and arugula! I love this easy flavorful dressing.

Lemon Vinaigrette Dressing

This dressing is light and fresh. It pairs well with fish and arugula.

Equipment

  • electric hand whisk (milk frother)

Ingredients

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp 5% white vinegar
  • 1 tbsp honey dijon mustard (could use regular dijon mustard but add a bit more sugar)
  • 1 tbsp sugar (or more to taste)
  • 1 clove garlic (crushed or minced)
  • salt and pepper to taste

Instructions

  • Mince the garlic. (I use a garlic crusher and it works super well and is half the work). Make sure to use fresh garlic, because the minced garlic in a jar changes the flavor.
  • Combine the EVOO, white wine vinegar, lemon, sugar, mustard, garlic, salt, and pepper.
  • Mix the contents. (I use a hand milk frother and it does the job! Shaking the closed container works too)
