White chocolate macadamia nut blondie

For those who love macadamia nut cookies, this white chocolate macadamia nut blondie is a must-try. I added a graham cracker crust, because why not.

Ingredients

Graham cracker crust

  • 1 pack honey maid cinnamon graham crackers The cinnamon is important, view notes.
  • 1 stick unsalted butter

Blondie batter

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1/4 tsp salt
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped macadamia nuts

Instructions

Crust

  • Preheat oven to 350 degrees.
  • Crush the pack of honey maid cinnamon graham crackers. (I use a potato masher, you can use a food processor or buy pre-crushed graham crackers)
  • Melt a stick of butter and add it to the crushed graham crackers.
  • Mix the butter and graham crackers. Grease a 9x9 pan and pat down the graham cracker crumbs into a thin even layer at the bottom.
  • Place the pan in the refrigerator until the batter is done.

Batter

  • Melt the butter in the microwave. Add the sugar and mix only until blended. Note, extra mixing changes the texture of the brownie.
  • Mix in the eggs one at a time (until the batter looks white).
  • Add the vanilla extract.
  • Mix the salt with the flour and add it to the butter mix 1/2 at a time.
  • Fold the white chocolate chips and macadamia nuts in.
  • Carefully add to the pan with the graham crackers. Make sure to not disturb the crust.
  • Bake for around 22 minutes. (I have found I get the best texture after 22 minutes).
  • Once blondies are cool, drizzle caramel on top. You can make your own or buy from the store.

Holiday Decor

  • Mix caramel with red or green food coloring.
  • Once blondies cool, use a cookie cutter to cut out the shapes you would like.
  • Drizzle the caramel on top.
  • Place sprinkles onto the caramel.

Notes

The cinnamon in the graham cracker is important. While you can use regular graham crackers, for the best taste you would have to add cinnamon. It is hard to fully mix into the crust and often times it tastes a bit "patchy in my opinion"
