Greek Fries

NYC has amazing greek food, and when you go into a proper Greek restaurant and order some Greek fries, they are out of this world. I tried to mimic it as close as possible in this recipe. This is a dish I love to eat this dish with Tzatziki and some fresh veggies.

In order to make it the traditional way, you need to soak the potato rounds for up to 24 hours. I usually soak for 6-8 hours and get a good enough effect. Though you do not have to soak them, this recipe for Greek fries still tastes good without the soak. Still, if you are planning ahead, I highly encourage you to soak them!

Greek Fries

I tried to mimic Greek Fries as close as possible in this recipe. This is a dish I love to eat this dish with Tzatziki some fresh veggies.

Ingredients

  • 5-6 medium red potatoes (soaked in water for 6-8 hours up to 24)
  • 3 oz feta cheese (or goat cheese see note)
  • 2 tbsp dry oregano
  • salt and pepper (to taste)
  • 2 tbsp olive oil
  • olive oil spray (for pans)

Instructions

  • Slice the potato into 1/4" thick rounds. Make sure they are semi even because some will burn before others are fully cooked and place in a bowl with water for 6-8 hours, or overnight.

After soaking

  • Preheat the oven to 400°F.
  • In a bowl, mix the potato rounds with olive oil, salt, pepper, and oregano.
  • Spray a baking sheet with olive oil (or coat with regular olive oil).
  • Lay the potato rounds in a single layer flat, on a baking sheet, and bake for 25 minutes. Flip them so the other side can crisp and put them in the oven for another 5 minutes until lightly brown on the other side.
  • Gather the fries together on the baking sheet overlapping them and sprinkle the cheese and a bit more oregano. Bake again for 5 minutes or until the cheese is soft. 6) Transfer into a dish and enjoy.

Goat cheese substitute:
If you find good feta cheese that melts and becomes creamy in the oven and
doesn’t stay dry and hard use feta cheese. But if you can’t find any, use goat cheese. It’s
not the same as greek fries, but it has an amazing flavor. The creaminess is important in this recipe.
