One of my favorite recipes is this cheesy soy sauce asparagus. I always make it as a side dish but end up eating it as a main dish because I just can’t stop eating it! It’s super simple and quick. It’s also a completely original recipe and you wouldn’t find anything like it anywhere else!
Cheesy soy sauce asparagus
This cheesy soy sauce asparagus is delicious and easy to make.
Ingredients
- 1 lb trimmed asparagus
- 1 pint cherry tomatoes
- 1/2 cup Mexican blend shredded cheese
- 1-2 tbsp soy sauce
- 1 large pinch of salt and pepper
Instructions
- Heat a non-stick pan on high with 2 tbsp soy sauce.
- Cut asparagus stalks in half and throw into the pan once hot.
- Slice cherry tomatoes in half.
- Sauté the asparagus making sure all sides get crisped by the pan. Add the salt and pepper and keep sautéing.
- When they get slightly brown on both sides, add the soy sauce and stir. The soy sauce will bubble and cover the asparagus, just make sure it doesn't burn.
- Throw in sliced cherry tomatoes, slightly lower the heat, and cover the pan. The tomatoes should give off their juices.
- Once the bottom of the pan is covered in juice you can uncover the pan and let simmer for a few minutes until the tomatoes skin looks like it is peeling.
- Turn off the heat and add the cheese and stir until melted.
- Immediately transfer the asparagus into a dish so the cheese doesn't burn and enjoy!
