This is a ricotta cream you can add as a topping to the Fudge Brownie for a delicious, easy, modification. It can also be used as a dip for strawberries. Follow the brownie recipe for the base and this recipe for the topping.
Make sure to use fine-grain ricotta. I used the Aldi Priano ricotta for this recipe which has xantham gum. If you want a creamier ricotta choice, another delicious option without the stabilizer is the simple truth ricotta. In the future, I believe I will be using the simple truth ricotta.
Lastly, more powdered sugar can be added for a sweeter version. This would work well for the dip. For the brownie topping, the sourness really balances out the super sweet chocolaty brownie and sweeter is not recommended.

Ricotta cream topping
This is a delicious dip or topping for a brownie
Ingredients
- 1/2 cup ricotta cream (fine grain)
- 1 oz sour cream
- 2 tbsp powdered sugar (more for sweeter dip)
Instructions
For Brownie Topping
- Mix the ricotta cream, sour cream, and powdered sugar together in a bowl.
- Once the brownie is cooled, you can spread the ricotta cream on top.
- Refrigerate until serving. The brownie could be cut up into small bites and served that way too! The bites are easier to cut after a day or two of the brownie being in the fridge since the ricotta cream slightly hardens.
For Dip
- Mix the ricotta cream, sour cream, and powdered sugar together in a bowl.
- Refrigerate until serving.
