Farmer’s Cheese Pancakes (Syrniki)
This is another type of Ukrainian pancake, but they are made with farmer's cheese. These have a tangy taste that mixes well with sweet dips like sweetened condensed milk, or maple syrup. It also is quick and easy to make!
Servings 8 pieces
Ingredients
- 1 lb Farmer's cheese (you can find friendship Farmer's cheese in most American grocery stores. If you can't, you can substitute fine grained ricotta cheese).
- 2 eggs
- 1/2 cup all-purpose flour + more for dusting
- 3 tbsps sugar
- 1 tsp vanilla extract
- sunflower oil for frying (could use vegetable oil)
- Sweetened condensed milk (for serving)
Instructions
- Add Farmer's cheese into a mixing bowl and use a fork to break apart and cream. The more you break it apart the creamier your pancake texture.
- Add the eggs, sugar, and vanilla extract and mix into the cheese. Then mix in the flour.
- Dust a surface with a lot of flour and transfer contents of the bowl onto the flour. Throw some flour on top of the dough, and roll into a log. Make sure to cover all sides with flour, the dough will be sticky.
- Once you have a log, cut into equal 1/2 inch thick slices. Tap each side of the slice in the flour and shape them into rounds. The smaller they are the faster they will cook.
- Heat up a pan on high heat with a thin layer of oil, switch to medium heat. Add the rounds into the oil and cook 2-4 minutes on each side until golden brown. This timing depends on the size of your rounds, if you like, you can cut one of the bigger rounds and see if the middle is done. If it isn't return to the pan for a few more minutes!
