Oladi (Ukrainian Pancakes)

I see many Oladi recipes, but none are quite like my family recipe. Oladi are a Ukrainian breakfast that most resembles pancakes. But, these pancakes are made with sour milk. Whether you use buttermilk, kefir, or actually spoiled milk (yes, spoiled milk) these pancakes come out amazing every time. If you have some milk that went bad in the fridge and need a use for it, this is the recipe for you.

These are most often served with this mix: sour cream, sweetened condensed milk, and black currant preserves. Black current preserves are pretty hard to find, so a different jam/preserve would probably taste good!

Ingredients

  • 1 1/2 cups kefir (substitute with the same amount of buttermilk or sour milk)
  • 1/4 cup sugar
  • 1 egg
  • 1 cup all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Sunflour oil for frying (Quite a bit of this is needed. This adds a delicious flavor, you can substitute it for vegetable oil but it will not be as delicious)

Instructions

  • Combine flour and salt. This will reduce clumping.
  • In another bowl, beat the sugar and egg together.
  • Add in the kefir while mixing.
  • Slowly stir in flour mix (I divide into 3 and stir it until all powder is gone and give it a quick mix to make sure it's fully combined). Make sure there are no clumps!
  • Stir in the baking soda.
  • On high heat warm up skillet with sunflower oil covering the bottom of the pan.
  • Add a tablespoon of batter to the oil to create each pancake and let it simmer in the oil. Make sure the oil is touching all the pancakes and lightly swirl the pan so the oil distributes while you cook.
  • Once the pancakes turn brown on one side (you can see it around the corners), flip them over and cook for 30 seconds or until the other side is lightly browned. They might spill a little from the top when you turn them. That is totally fine. You can turn down the heat just a bit so the bottom takes longer to brown and the top will solidify more.
  • Serve with sweetened condensed milk, preserves, and sour cream!
