This is a super simple and refreshing Russian salad you would typically have in the summer!
All you really need is tomatoes, cucumbers, dill, sour cream, and salt but other veggies can be added! Personally, I enjoy adding radishes, and red peppers. Cherry tomatoes can be used, but they don’t give off as much liquid, so they don’t taste as good. A very ripe tomato tastes best! Additionally, I like using Persian cucumbers or mini cucumbers with the skin as they are very refreshing. You can use a different type of cucumber but remove the skin.
In the summer, I will pick the cucumbers, tomatoes, radishes, and dill from my garden and make this salad. It is called “Summer Salad” because everything you can pick in the garden during this time!
It also pairs very well with buckwheat.

Russian Summer Salad
Ingredients
- 1 ripe tomato (the riper the tomato the better this tastes, could also substitute with 1 cup cherry tomatoes)
- 2 persian cucumbers (other cucumbers can be used, but these are very fresh)
- 3 radishes (optional)
- 1/4 red bell pepper (optional)
- 2 tbsp dill (chopped)
- 2 tbsp chives or green onion (chopped) (optional)
- 2 tbsp sour cream
- 1/8-1/4 tsp salt (to taste)
Instructions
- Chop the tomatoes, cucumber, radishes, red pepper, dill, and chives.
- Mix all the vegetables with salt and sour cream. Enjoy!
