A delicious holiday staple is the Ukrainian imitation crab stick salad. You will find this dish on the table at every celebration. This is my family’s recipe for the dish. Many families have their own versions, and like everyone, I like mine best! Thus, I thought I would put it out into the world for people to try.

A delicious Ukrainian holiday staple is the crab stick salad. You will find this dish on the table at every celebration.

Ingredients
- 8 oz Imitation Crab (leg style works best)
- 1 small potato
- 2 medium carrots
- 4 hard boiled eggs
- 1/2 small yellow onion
- 2 cans whole kernel corn
- 1/4 cup mayo
- 1/4 cup sourcream
- salt + pepper to taste
Instructions
- Boil the potato and corn until fork tender and let cool to room temperature. In a separate container boil 4 eggs.
- While the potato boils, dice the crab and onion.
- Peel the eggs, potato, and carrot and dice them as well and add them to the bowl with the crab and onion.
- Drain and add the corn.
- Add the sour cream, mayo, salt, and pepper then mix.
- Taste and adjust proportions as necessary (I added 2 tbsps extra of sour cream because my potato was larger than usual).
