Pecan Wedding Cookies
These pecan wedding cookies are an alternative to the almond version. I decided to keep the almond extract in for a more layered taste.

Ingredients
- 1 stick unsalted butter (softened)
- 1 cup flour
- 1/4 cup powdered sugar (more powdered sugar for dredging
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 1 cup chopped pecans
Instructions
- Preheat oven to 375 C
- Use a hand or stand mixer to beat melted butter until creamy. Add the 1/4 cup powdered sugar and mix.
- Add the flour and salt to the batter. Slowly mix it as to not make a flour cloud. Once the powder is incorporated mix on high.
- Ground the pecans. I used a magic bullet, but a small food processor or blender should work. It can be a little chunky but mainly should be creamy. I had to shake the magic bullet and use a spoon to mix all the sides to really get all of it incorporated.
- Add the vanilla extract, almond extract, and ground pecans and mix.
- Roll the cookies into shape. Use an ice cream scooper, or a tsp to scoop the dough. Roll the dough into a rope shape and make a crescent. You can also do bar shapes or regular small circular balls/cookies.
- Arrange the cookies on parchment paper. This is important because the cookies need to cool or they will break if you try to get them off the pan.
- Put the cookie sheet on the top rack of the oven for 5 minutes. Transfer the cookie sheet to the bottom rack and turn 180 degrees so they bake evenly for 5 more minutes. The cookies should be lightly golden around the corners.
- Cool the cookies by removing the parchment sheet and placing the sheet on a cooling rack.
- After a few minutes sift the powdered sugar onto the cookies. The cookies still have to be warm for the powdered sugar to stick so make sure you don't wait too long for the cooling. I added a bit of red colored sugar sprinkles for a Christmas vibe and a pop of color. Also, you can add a lot of powdered sugar, I preferred to add just a bit, but some people roll these 360 with powdered sugar and get a nice layer. Feel free to try both!
